Submission Guidelines

To submit a recipe, you can email Jaidi and she will add you as a contributor.

You can post any recipes you want. Please be sure to follow these two simple guideline.

Please include the title of the recipe in the subject line, and only the recipe itself in the post.

Also, we would like to be able to divide the recipes up by the type. So please include labels on your recipes. Labels are put on your post at the bottom of the edit post window. Labels can be as simple as main dish or dessert to Chicken or beef or however you want to label it. Just make it easy for someone to find.

Homemade Frozen Burritos

This goes along with the Cafe Rio recipes. I usually make the pork, rice (recipe cut in half), beans and Pico De Gallo. Which leaves me alot of leftovers, so I wrap them up in burrito sized tortillas and freeze them. I also make the rice with salsa (just replace one cup of salsa for the water) then the frozen ones already have salsa built in.
Instructions:
Put aprox. 1/2 cup of rice, couple spoonfuls of beans, meat and shredded cheese on one side of the burrito. Wrap snugly.
Place on a cookie sheet and put in freezer for 15-20 minutes to start the freezing process. This helps prevent the saran wrap from sticking to the burrito.
Take them out and wrap them up snugly and well in saran wrap.
Then place in the freezer.
Depending on your microwave you will have to play with the times a bit, but defrost for about 1 minute and then heat for about 2 minutes.
