Pasta Carbonara

I got this from a good friend and it is SUPER yummy!

Carbonara-

1 box pasta
1 med yellow onion, or half big onion, or the whole dang thing if you love
onions
olive oil
about 1 cup of cubed ham- i just buy it pre cut
between 1-2 cups of peas
3-5 eggs (usually one per person or so, i usually do 4)
1 bottle of alfredo sauce (i usually get the kind with extra parmagianno)
pepper, salt, basil

so, fry up the onions in the olive oil.  when the onions are almost done
toss in the ham and peas and just heat that up.  at the same time get the
pasta boiled and ready.  when the pasta is done leave the oven on but turn
it down to to a medium (or med-low) heat, drain the water in a colonder then
toss the pasta back into the pot and put it back on the stove.  once on the
stove crack all the eggs in and start stirring the pasta and eggs around
until the eggs are cooked a bit (it'll look like scrambled eggs). then get
the pasta off the heat, dump in the peas-onion-ham stuff then the bottle of
alfredo.  after that put some pepper and basil and salt to taste.

Pasta something or other

It as been a while since the last post on this blog...you'd think people were busy with Thanksgiving and Christmas...

I decided that I would post one of my favorite recipes. It is an easy one, but takes a little bit of time.

Ingredients:

1 pound of ground beef or mild italian sausage
1 pound pasta (Rotini, butterfly, or like noodles)
1 pound of cheese
1 can of corn
2 cans of diced tomatoes or stewed tomatoes

Boil past first. Drain and return to pan. Add the cheese and stir until melted. Add in the corn and tomatoes. Mix. Add the meat in and stir. Serve hot.

Last week when we made this, we used the sausage for the first time. It was amazing and much better than the ground beef. If you use the ground beef, I would highly recommend adding some of your favorite beef seasoning.

Hope you enjoy it. It is great, and if anyone can come up with a good name for it...Kudos for you. I'd make it a give-away, but lets be honest, I have no money and no means to do it as a give-away...So just Kudos to whoever comes up with the best name...We have called it Cheesy beefy mac stuff. That doesn't work with Sausage.

Enjoy~
